If you use an Apple Pencil or mouse, this will bring up the full selection popover: If you use your finger, this will bring up the standard selection popover (without color options). Select the text you want to strikethrough.This appearance will show the text without the strikethru. Of course the best way to do this is to go back to the original Word file and fix. Once you select that tool place the cursor on the text to change and type in the fix.

I am not going to give you an example on how to do this, because it is not a good solution: the form remains interactive and the moment the end user clicks the field, Adobe Reader will replace the /DA with an appearance created on the fly in the viewer. In Acrobat XI you can use the Tools-> Content Editing, Edit Text and Images tool ( if you have an earlier version the name of the tool has changed- used to be theText Edit tool). In this appearance, you could draw the text and a line that strikes through it. You can define your own default appearance ( /DA) for the form field.There are two other possible workarounds depending on the final result you want to get. Hence, it is impossible to fill out a field with "stroked through" content, unless you'd find a font that contains such characters (as indicated by mkl in his comment). If you consult ISO-32000-1, you'll notice that strikethru is not a property of a font ( BaseFont), nor is it possible to set that property on a field. I am responsible for that poor design choice, mea culpa. Using Font.STRIKETHRU as a font property in iText was a design flaw.
